383 stroker???

i just bought a 75 corvette with a 383 stroker everything else stock. suspention brakes tranny and electronics all had been redone. problem was that the guy that owned it before me didnt ask anything about the vette when he bought it. he hardly ever touched the car. so when i asked him all he knew was that it they had been redone and that it had a crate 383. he didnt know any specs on the motor. who he bought the motor from or anything. i fixed the vacuum problem but it stutters and hesitates on a heavy take off. it has a 750 edlbrock on it now. im only able to go home on the weekends so i havent really got a chance to work on it or drive it to see what it does but a little bit. im still trying to get ahold of the previous owner who built the car. i was gonna try to ajust the carb and see what that does first. then i was gonna try a 650. any sugjestions?

If none of those nutballs have any details, it could be a stock 262.
