White is great unless you plan on sitting on the seats
It's also a real pain to keep clean while I'm working on it. How about just white inserts? You'd get some white that way and if anything happened to it, the whole thing wouldn't need to be re-done. This is a '53 Chevy front seat done in Ultraleather. The three colors are navy blue, royal blue, and white.
