68 mustang rims

I have a 68 mustang G T 390 Fastback, I plan on buying 15x7 or 15x8 rims the backspacing is 4.25 I installed 1" lower front coils and 1" lower rear leaf springs, In researching I am told I would be able use p225/60 r 15 tires without any problems of them rubbing the fenders or quarter panels. Appreciate any feedback if I could go as big as 15x8 and what tire size. Thanks
