Whatever you do, don't pick out vinyl to match your fabric in anything but outdoor daylight. You will get a much better match that way. Your last picture would match Spradling's Islander Crimson to a "T" as far as color, but not the grain. I like Islander because it is a marine vinyl. I took this picture outside, but it looks a little darker in person. You can still get GM vinyls in the correct grain patterns and colors. Your car would have used a Madrid grain. http://www.yourautotrim.com/madrid.html
