I can not answer the question on yoke lengths..
Many yokes from various GM trans fit the 700/4L60 trans... t-200 , t-350 , 2004r all fit the 700/4L60 trans.
I would suggest using a yoke that matches the U-joint you have on the differential if possible.
A drive line shop should be able to answer the question on how long a drive shaft is possible with out problems.
