I recently purchased a 1971 Impala Sports Coupe. I am not aware of the gearing in the gear end but I know it's not posi so it's not what I want. I'm sitting a SBC 409 under the hood with a 35o Trans and 3500 Stall Converter. But basically I would like to know what rear ends would sit right in the impala without to much modification. If you have the 8.5" corporate rear end (IIRC you should- well, that or the rarer 12-bolt), keep it and swap out the carrier for an Eaton and a pair of 30 spline Strange or Moser axles. Yukon gears have had good reviews (I've never used them), or whatever brand you prefer. That's enough to keep up w/most anything you're likely to put to it unless you go to a trans brake and/or slicks a on a prepped track.
