86 Chevrolet Hydraulic Clutch

I am having trouble with my clutch pedal. I replaced the slave and master cylinder and was able to get it bled. The issue i am having is the clutch does not engage until the pedal is almost clear out. Is there a way to adjust this setup so the clutch engages sooner?

Not that I know of. Every Hydraulic clutch I`ve ever used engauged almost at the top of the travel. You get used to it after a while.

Maybe adjusting the pedal travel would give it a better feel for you, but like DV says, it's probably normal.

Can you adjust the pedal at all? So it engages when the pedal is closer to the firewall? Maybe a custom bracket?

Rather than shim the SC, you could shorten the push rod...

Sounds more like the clutch is wore out. Did you have the same problem before you replaced the hydraulics?
