Bare metal protection by the pros .....

I've always used (and always will) a bare metal treatment in the process as I don't put in over 10-15 hours a week on my restorations (yeah, takes a couple years). Always a phosphoric acid treatment used properly and a compatible epoxy primer. I was noticing in a few magazines that Rad Rides by Troy always had a half dozen cars or more in bare steel for months at a time - this is what they use (supposedly) - not sure what it consists of but apparently no phosphoric acids :

You don't say where you are based. I worked for a company close to the Ocean in Calif that made parts for harley, they would rust in 4 or 5 hours. that cold damp fog blew in every afternoon, One of the Chrome platers was in arizona, parts could set in his shop for a couple weeks with no problems.
