I used a spray - type guide coat and the nooks and crannies of the car are difficult to get to. I was wondering if I could use acetone to take the guide coat off. The can says to take overspray off with acetone but I'm not sure if it means overspray on the paint or overspray on non-painted areas.

You must have put your guide coat on too heavy, all you needed was a very light dusting. To answer your question, yes you can remove it with acetone. Do not wet the surface profusely or you will take off the primer also.

I would think about sanding it all off. I have never found a need to "clean" it out of anything, just sand it out.
Acetone is a VERY heavy, slow evaporating solvent and it can soak into primers and such before you know it. I would avoid it and just sand the stuff out.

you should've masked off areas where you didn't want it on.
