I just had my '70 Chevelle aligned and seems to do the same thing. I think that they adjusted the steering gear too tight that it's too sensitive. I'm bringing it back next week for them to check.

Most shops do not adjust the steering box correctly! The box must be adjusted with the pitman arm disconnected from the tie rods. It is a common mistake because many shops have this misinformation passed down by word of mouth rather than consulting shop manuals.
