caster for better high speed stability

is there any certain degree for better high speed stability? this is on an s10 pickup.

The more positive caster you add the greater the self-tracking(stability) is. Only down side is the more positive you add, the higher the low speed turning effort is at the sterring wheel, and increased tire scrub.

5-7° is a good drag racing figure, if you can get enough adjustment to go that far, 4-5° is more typical.

do you know what the setting is on an s10?

It varies depending on year, trim, engine, 4x4 or 4x2, etc. But the generic figures I just looked up are +1 to +3 degrees.

I wouldn't go more than 4 or 5. Get your straight line stability with scrub radius (using offset) and toe. A scrub radius of about +1/4" and toe in of 1/16" should match up a pneumatic trail to keep you nice and stable depending on tire width.
