Converting fuel injection to carburation?

One of the drivetrains I've been thinking of is a Mazda Miata, which is a fuel injected engine, we're not sure we're up to working with fuel injection, it's been suggested to me that you can take an injected engine and convert it to carburation. Does anyone know if this is feasible and if so how big of a project it is?
My daily driver is a Miata and I know these little engines run forever and are very dependable.

I guess I will pass on the 'why' question. If you would like to experiment, you can fit a turbo II 13B rotary engine in your Miata. This is a popular mod people undertake. Very satisfactory results. I drove in one when I used to belong to a rotary Mazda club.

A company here in Nevada used to install 302 Ford engines and transmissions in them, Monster Miata.

To change one of those engines to carburetted, use the Edcelcbrock manifold and Holley carb, and change the gear to the Motorsport gear on a stock early points/DuraSpark dist and go forward.

GM from EFI to carb., same process.
