I think the only "problem" you might find with the placement is reading the gauges accurately...or are you going to use digigtal gauges?

I've driven CJ5's for years and the analog gauges are center mounted on a flat dash...but the gauge layout is designed such that it reads correctly only from the drivers position I'd think they were taking into account the angle of the view.

My Hudson also has center dash mounted gauges from the factory (w/2 glove boxes!) but I'm replacing the analogs with LCD's and digital gauges and adding a rotating Heads Up Display...
