Darren Morgan would be my go-to guy if I were building a large cube big-block. He is a wizard at 500 cube pro-stock engines. For a sbc I would go with Larry Meaux or Chad or Eric. Don't forget some good shops that have specialty cnc programs available for whatever head you have. You'll save a lot of money going that route.
