My engine builder did alot of marine builds for saltwater conditions. He used epoxy on those engines, very durable and easy to clean. I had him paint my 327/340, Chevy orange with epoxy. It looks great, perhaps a bit shinier but the color is right on. It will last the life of the engine. The downside is, it's expensive and you need to have spray gun to apply it or have a pro do it for you. I used to use VHT products on detailing jobs with the engine left in place and had good results. Advantages are it's easy to use, comes in cans, and it's fairly cheap.
