The car is stock inside so the temp gauge is pretty much useless. I have a 195deg thermostat, so I'm guessing the first fan should come on soon after this opens - is this correct? I run my electric fan all the time. I depend on the thermostat to regulate the temperature as that is what it is designed for. The only downfall is it is a load on the electrical system. I like to keep things simple and having it running all the time eliminates some points of failure.
To answer your question, I would turn it on 10* above your thermostat rating and off 10* below.
