Fan cut-in temp
 
How do you choose the temp at which aftermarket electric fans should cut in?
Car is '68 Mustang, 392 stroker, GT40 ally heads, ceramic coated headers, Edel 750 carb. Cooling system is BeCool ally rad (direct fit), Edel water pump, twin Spal 11" fans built into a shroud module. I am using a two-stage thermostatic switch to control the fans. The car is stock inside so the temp gauge is pretty much useless. I have a 195deg thermostat, so I'm guessing the first fan should come on soon after this opens - is this correct? And second fan at maybe 10deg above that?

I run my electric fan all the time. I depend on the thermostat to regulate the temperature as that is what it is designed for. The only downfall is it is a load on the electrical system. I like to keep things simple and having it running all the time eliminates some points of failure.
To answer your question, I would turn it on 10* above your thermostat rating and off 10* below.
