Dont know about the fish eye but orange peel is how your paint turns out after a bad paint job. When you look at the paint it literally looks like the skin of an orange, I believe this is due to poor prep work causing the paint to have pit marks in it.

Fish eyes are caused by something on the surface that you're painting on that makes the paint push away from the area and not adhere, 99% of the time its oil or silicone.

Orange peel is when the paint has a texture to it like the surface of an orange, it can be cause by many things such as improper gun adjustment, and improper shooting.
