If you are starting from the ground up on a motor, I would go with a 351 Windsor. It is easier to get more torque and HP than out of a 302, it has stronger block, better rods and it wouldn't be as hard on the engine with those extra cubes. Any pickup weighs a lot and I would go with a bigger engine than a 302, BTW I have a 390 in my 67 F250 and it pulls all day long without breaking a sweat.
