Fuel psi shouldn't even matter to how the exhaust is, at all.

Temperature rise on heavy acceleration is normal, and more quickly seen on a temp guage with the increased thermal conductivity of the aluminum heads. As long as it comes back down to normal after a minute or so it is fine.

215 is not even hot at all, 240+ would be time to worry.

What carb are you using??
