Roof panels off of old station wagons and vans work good for this. The ones with the ribs in them make for a neat look. I just used some sheet metal for mine and put just a little crown in it by working it a little over a empty oxygen bottle. Thats it in my Avatar.

I have a 1931 sedan that I will be filling the top on, I haven't been able to find a pre made piece, I have did some research and found that the lid off a Chevy astro van will fit with some mods, also lids from station wagons will work. basically anything with the right length and width.

I filled in the roof on a 36 coupe. I used a roof from a 80 chevy monza hatch back. It was a perfect match for the shape of the 36 roof. It might work on your 31.

The likelyhood of getting the right curves front to back and side to side in a donor panel is not high, but you can make up for a lack of shape (surface area) by stretching after you have welded the panel in. If the panel has too much shape you can shrink it down. A lot of work either way.

Reading the panel and deciding what it needs is a little tricky. A perfect panel with just the right amount of surface area might look like a panel with too much shape after welding, when in fact it needs stretching at the weld, not shrinking overall. Templates fore and aft, side to side will help a lot.

If you post pictures once you get started you'll get plenty of advice.
