I am in the process of gravity bleeding my brakes ( 77 corvette ).How long do you let fluid come out or how much fluid to let out.

I always open all 4 bleeder screws, and let about a 6" in diameter puddle form.
This way you can tell if the proportioning valve is working. Leave the lid off of the master cylinder, and keep refilling it. Corvettes with 4 wheel disc brakes will empty the master cylinder quickly. Keep topping it off when needed.

Generally once you see fluid you are all set, as Carsavycook said you can let it run for a while but don't let the master go dry or you will be starting over.
Did you replace lines or cylinders. If you replaced lines, depending on the configuration a gravity bleed may not be completely successful if the car is level.
