Heat!

So i rebuilt my .40 over 350, vortec heads new cam and lifter push-rods bearings the hole shebang. New water pump new thermostat hoses so on. My problem is it heats up about 3/4 of the way across the gauge , sensor is new too. I rev it up it cools down but at an idle it heats up bad. Did I put the thermostat in backwards, ( a few beers were involved in the build) or bad water pump before i tear into things just thought I'd ask . Thanks !
