Help tuning my SBC

I got my truck running a while back and found that I had to change my stahl converter so I did now I have it running and everything but it still seems to need a little tuning. It idles well, after it gets warmed up of course, but when I rev it up it wants to stay reved, for example, i barely touch the pedal and it revs high and stays reved for a little longer than it should. Instead of going up and coming right back down the RPMs go up and slowly come down. Another thing is that when I shut off the engine it didn't die immediatly it turned a time or two then spit up through the carb and smoked out of the carb. I have checked for vacuum leaks over and over and haven't found or heard any and I tried a fuel regulator and it didn't run any better. the carb on it is a carter afb comp series.

High idle

Had the same problem on a 290 HP 350. The intake manifold was warped creating a vacumn leak in the valley, changed out the intake and problem was cured. I would check everything else before I tackled the intake.

if there is nothing binding at the accelerator pedal, cable, or linkage
slow engine deceleration is usually a lean condition
play with your timming with the dieseling problem
