Arrow Holley 600, how do I know if it's running lean?

I have a '49 Chevy Truck with a 350/350 and a Holley 600 Carb. with electric choke and vacuum secondaries. When I first start it up and drive for a little while it runs great and is very responsive but after the motor warms up a little it doesn't run as well, (the tires don't churp when it shifts). Can it be that the carb is running lean and when the choke is engaged it richens the mixture enough to make it run better or am I missing something else. And how can I tell if it's running lean?
I just got it licensed yesterday and this is the first real driving that I have done with it.

Does sound like it's leaning out. You can put your hand over the carb air horn a little at a time and if it picks up it probably is getting lean. But before you dip into the carb, spray some flammable contact cleaner/brake cleaner around the carb base and the intake ports to make sure you don't have an air leak. If it does it will speed up when you spray around the leak.

The plugs have less than 100 miles on them so there isn't a whole lot of color but I would say that they look amber.
