Did you adjust the accelerator pump lever? It should be adjusted to between .015-.020. Is fuel bowl level correct? Check your plugs to see how rich or lean the motor is running. But those adjustments if not right, will be part of your problem.

If it goes when you let off it might be to lean. When you open the throttle that means more air is coming in.Either accel pump promblem or just to lean.Is there black smoke when you get on it.Could be choke pull off promblem and to much fuel.Look for black smoke. No smoke start looking for lean condition.

here is how I fixed mine
I took off the accel pump arms and straightend the bend a bit
(holley has had an issue with weak accel pump arm springs)
I then turned the spring adjustment all the way down to just before spring bind.
re installed arms and adjusted for .015 between the pump arm and diaphram arm at wide open throttle.
adjusted so that the slightest movement causes squirters to squirt or dribble fuel
then road test
mine was fixed
now when I punch the throttle rear tires spin like no tomarrow at a standstill.
also you might try various cams and shooters is it gets better but doesnt solve the problem entirely.
