how should epoxy lay down?

I've been shooting a few parts with Omni MP172 black epoxy over the last few weeks and I'm not sure I'm getting the right results.

The paint covers relatively well, but it has a rough texture - tons of peel, I think. Not smooth at all.

I've tried it mixed per the tech sheet, and also reduced around 10% with acetone (also per the tech sheet), with no real change. It seems to be smoother in spots where I hesitated or accidentally got too close and the paint went on thicker.

I probably have the gun not setup right, and am not consistent enough with my technique, but I wanted to check before I go fiddling with settings.

Should epoxy lay down perfectly flat assuming everything is done right?

If it should be flat, any guesses on what adjustments I might make? I have a cheap Princess Auto HVLP (I think it's a HF 43430 basically), running about 25 psi with the trigger pulled, full fan, and 1.5-1.75 turns out on the fluid knob.
