intro and quest

Hi my name i s Troy,
I love rods of all types, I"m 41 years old . From Pa.
I use to race thunder cars but haven"t raced in a while and now want to get into 358 sprint cars. I have the chassis and body parts along with several other things, I"m not very engine wise I have alwys let someone else do that part but want to try to do my own, in this divission you must run steel Gm heads and a steel block no etching no grinding under the valve seat no welding or reshaping thecombustion chamber, exhaust valve can not exceed .025 size, over stock intake valve no bigger then .060 inch over stock. heads must have 23degree valve angle max compr ratio is 10.75:1 max stroke 3.5 inch cannot exceed 358 cubic inch max displacement.can not use multi spark or down nozzle, no v-6, no titanium, plastic, or carbon crank or rod, crankshaft cannot wiegh less then 46 lbs.Which would be better 350 bored .040 or 327 bored .040, which will get to close to 600 hp or better? suggestions.
