Laying Out The Sewing Tables?

Whats the proper way? Should you have one in back to catch the work and one in front to help feed it?

What's the proper way to do what? Are you talking about adding extensions to your sewing table? If so, extensions go to the left and to the rear. They would just be there to support the work, the machine itself does all the feeding.
