Let us know how it turns out, heck you can't get decent exhaust for $300 around here. so your buying all these parts used from him and labor for $300.?

He won't be around long charging like that. If he's good, he deserves to be paid properly. If he's good, he should already know that. I'd use care here as sometimes you really do get what you pay for and his lack of experience in proper billing just might carry over into his work. I'm hoping otherwise.

New Business

The auto repair shop's attitude will change when the owner gets his business established. If he is located in a large metropolitan area and puts an ad in the yellow pages or has a internet advertisment, he will have so many customers that he will be able to "cherry-pick" the jobs he does. Never take a car to a auto repair shop that has a "Service Manager" unless you have deep pockets.

You are fortunate to find a repair shop that has recently opened for business. If he is still in business in six months, he will tell you.... "Take it somewhere else".
