If all the rust you have is a surface rust inside of the doors,you can ether sand blast it and reprime it with a bare metal primer or there is a stop rust product that you can brush on and it stops the rust from advancing.I do not know what the name of it is or how makes it.As for removing the door skin,I have not seen one removed with out distroying it.Good luck.

If surface rust why not grind out as much as you can, and then paint it with POR15 (paint over rust 15). Or you can cut the rusty parts our and weld in a new patch panel. Grind down the welds and use a little bit of bondo and then reprime. Good as new
