Years ago I bought a cooling fan, it kicked around the shop till the box fell apart and the instructions are poof.
Some one may recognize the controller or at least how it operates.
Fuse line w/ spade conn. would be power.
Two circuits Y together to a common blk w/ ring conn.
I'd think that would be ground.
If thats the case then the blk/orange and blk/red would power the fan or is it two circuits for two fans?

I think it depends on the wire gauge. If they are 18 gauge then i would say that the red wire and black wire should go to a relay. The black/red and black/orange could be sensor wires for A/C and temp. Just a guess though.

tried testing on stove, couldn't get either circut to operate, on the test light or VOM. Digital alarm went off at 217*

I was gonna ask if that cover popped off to see inside it. when ya get the new one. photo copy it so you have it on your computer for safe keepin.
Might have fried it already. not sure. if that is the pos and neg two wires. you should hear a clicking noise if bumping the neg wire on an off a few times.
if it does check one of the other 2 wires with vom from a good ground.
sorry I flap my jaw or fingers before my brain kicked in. with vom set to ohms. check for resistence between 2 terminals, for the coil.
this is a basic fan relay schematic.
with the coil to +12 and ground. should feel if in hand or hear a little click of the relay closing for the contacts inside it.
The grey wires are the temp probe for the cooling fins.
I'm looking at your schematic, doesn't make any sense to me. How does the temp probe close the switch to activate the coil?
I checked the Hayden site, close but this one is 30 years old at least.
now that I see the pot.
summit racing has unit made by Hayden Electric Fan Controls. not the exact relay. mighta updated them but wiring might be the same. they have a pdf file.
ignore that drawing. that hayden unit has the gray wire temp prob. take a look at the PDF wiring file.
