Need some pointers for cleaning up carb for rebuild

Hello guys I just got a used holley 1850 600 cfm carb and am going to rebuild it but I need to clean it up some and I am not using a bucket of carb cleaning stuff or anything just a can of carb cleaner and air blow out all the passages etc. But the question I have is on the butterfly's they have a little bit of surface rust on them but are still in good shape. What can I do to clean that off without damaging them?

Any more pointers on how to get it as clean as possible would be appreciated. I got a total rebuild kit and have a book and instructions on how to build it etc.

I would wire brush off the rust and dab a little phosphoric acid on the rust spots on the rust to convert it.
