Too big? I doubt it. 2.5 inch dual pipe is the common size almost any exhaust shop will use on a 350 chevy stock or modified. I would only run a single 3 inch pipe if there wasn`t enough room to run duals.
Some systems don`t sound good with certain mufflers unless a balance pipe is added.
Stfinney, one thing you can do to find where the balance pipe should be is by spray painting a narrow line on the exhaust pipe after the header. Take it down the road for about 5 miles and get on it hard a few times. Let it cool and look at the pipe, where the paint is bubbled or missing will be the hottest place on the exhaust, this is where you should add the balance pipe.

this is basically a stock engine and a single exhaust will provide better low end.

2.5" is about the smallest a shop will usually install, I just think that it is the wrong way to go if you're looking for torque with a basically stock engine.

X2, this WORKS,
For a STOCK motor, I'd go 2" or 2/14", if it's even slightly modified, 2 1/2" will be fine, maybe drop to 2 1/4" for the tailpipes, to keep the velocity up as the gasses cool and contract,
