New metal bracing on door hinge sides.

How much room do I need to attach wood over the steel on the door hinge braces for upholstery, and what is the best way to attach it epoxy?

It all depends on what you are attaching to the wood. I dont have any wood in mine, the only issue is we had to staple the windlace to the panels and clip the panels in. Works great. What are you working on? Many factors here and many options. To attach it, just screw it on and you know it will stay.

I still don't understand what you are asking in the original question, but by all means, either screw on or pop rivet on whatever you are going to use.
