5 and 6 Speed GM Transmissions

I have a built 355 SBC (approx 425 HP) which I will be installing in a 30 A Model roadster (Rat Rod type car). I will either be using a 700R auto, or one of the above mentioned manuals. My question is what years do these manuals match up to. I know in 95 they were being used in the Camaros and such. My block is a mid sevnties, are there adaptors available for the older blocks, if needed? Any all info concerning the above will be greatly appreciated. Just don't deal with the late model stuff much.
