I would like to know the fattest low profile tire I can fit on an 18x9.5 inch wheel. I would like to do 315mm but I don't know if that would fit the wheel. If you know of any resources or know the answer please post!

You won't find anyone with that answer. There are too many variables. You need to take into consideration the wheel back spacing, width of tire and the available clearance both at ride height and jacked up to determine if the tire will clear both installed or if installation is even possible. You always want at least 3/4" clearnance between fender lip and the tire and the inner fender liner and tire to compensate for suspension shift etc. Don't trust what someone else did as a measure of what will work for you because all suspensions sit a little different and tires vary quite a bit.
You can make a jig to bolt to your bolt face that you can rotate to determine clearance if you do not have tha actual wheel to work with.
Either tire will fit on a 9.5" rim. Check with your tire manufacturer for their input, they should have a minimum and maximum along the prefered rim width!
the problem isnt fitting the tire. its determining if the wheel (rim and tire) will fit the car, and without discloseing what vehicle you are planning to mount the rims on it gets kinda hard to anwer your post.
