If you have a 79 BIRD parts car, that will be your best and cheapest choice. The spindles are preferred over the earlier mid-size cars.
NOTE: The rotor hubs are larger than the 65 FORD so you would have to use later wheels or get the rotor hub machined.
The conversion kits use GM parts.
I don't know how proud you are.

SS Brake Co have 2 kits that will work without the pain of changing the spindles. Baer also offers a system as well if you want to leave your first born for purchase.

66 galaxie brake conversion
Dude; Check out Dearborn classics (dearborncassics.com) they have direct bolt on disc conversion kits that you don't have to change out your spindles and include dual master, proportining valve and stainless brake lines!

in 66 ford had disc on your car, they may be hrad to find now but they mite be out there..

You will need to change the spindles at the least. The GRANADA swap is popular here and www.fatmanfab.com has reworked spindles cheap or http://www.critesrestoration.com/galaxie.htm has the complete kit or a list of needed donor parts.
I would also try 72/ TORINO spindles as they have heavier brakes. Just beware of any (if any) differences in the ball joint/tie rod end tapers. They can be machined.

As long as they fit
I would measure the height of the existing spindle and compare that to the one proposed to be used for the swap..
do the steering arms come out in the right place and length to work..?
I think but not sure the ball joints are the same size in big fords..so the new spindles should just bolt in..Fords did not seem to change dimensions all that much in the big cars..
As far as changing the booster as long as the new master cylinder bolts up it should work..
Bottom line do some measuring of what you have laying about so to speak..
My thoughts on how to go about this..

Ford Galaxie Disc Brake Conversion
We are going to convert a 1966 Ford Galaxie to disc brakes. I have looked over "Hotrodders Knowledge Cluster: Disc Brake Conversions" and found useful information there but it does not exactly answer my question.
I will start with the things I know about this conversion.
In 1966 Galaxies had a single brake system, Ford went to the duel system in 1967.
To convert a 66 Galaxie to disc brakes I will need:
1. a duel reservoir master cylinder.
2. a disc brake proportioning valve from a newer Ford
3. right and left disc brake spindles
4. two rotors
5. right and left calipers
6. a good quantity of new brake line
If I have left anything out please tell me.
Now for the things I do not know.
1. what years of full size Ford disc brake spindles will work?
2. will I need to change the power brake booster?
I have several models of disc brake equipped Fords in my possession and from eyeball comparisons I should have something that will work.
It looks like the spindles from the 1979 Thunderbird or the 1987 Crown Vic police car should work or do I need to look for something older?
