I would only use one choke. It should be sufficient.
12 gauge wire will do the trick. Are you sure the chokes are 6v? If they're 12v chokes and you only give them 6 they'll never open.

Questions about my dual carb set-up
I am in the process of installing a dual carb set-up on my Chevy 261 Inline 6. I have a pair of Carter-Weber 2 barrel carbs that are getting mounted to an Offy intake. The Carter-Weber's have an electric choke. Do both of these get wired or just one, leaving the other with no choke?
Also, what gauge wire would you use for the electric choke. I am still running the original 6 volt system on this old Chevy.
