Just like his 1955 Cessna twin engine plane on a Toyota Van Chassis, and a few other nut-ball creations such as the "Jurassic Park explorer.

The NZ run sounds fantastic - an endurance race that actually goes somewhere instead of lap after lap on a stock car oval or a sports car "road" course. Sorta like the "Targa" series but for junkyard refugees
Lol, yeah it's funny as a play seeing what these guys come up with, the culmination is normally a rugby union test match between the all blacks and another international team. They normally start with a flour bomb and water bomb fight, ya gotta stand at a distance. Speaking of targa , we have one here, I've thought about getting my son to do it with me in my66 mustang?
Later gator

It's called the undy 500, you have to buy a vehicle for under 500 bucks and do it up as anything you want, police cars, ghostbusters etc, some real good funny cars. Worth going to see them head off every year.

In this case, likely started as a flood car - no longer road legal cannot be registered etc. Sell off a lot of the parts to bring costs down to (essentially zero) then build an upside down racecar, using parts 'n' pieces from other scavenged/junkyard sources. (Sorta sounds like hotrodding, doesn't it?)

Then ADD safety-spec roll cage, and voila!

As soon as I saw the team name (Speedycop) on the side, I knew where it was from and who the team was - Speedycop runs in many of the 20 or so LeMons races held in the US every year.
