How much is it overbored now? If it's bored .030 over now, and you bore it another .030, that would be .060 over. Combine that with a 383 stroker kit and I believe it would be a 388 stroker.
Has it been run at 30-over? If so, its not just as easy as putting new pistons, rings, rods, and crank in it. You can't really run new stuff in used bores. My machine shop won't even assemble a stock shortblock without overboring to the next step. Every piston manufacturer is slightly different. A good machine shop won't even hone a block until they have the pistons in hand to measure.
Poor ring seal, cracked rings, piston slap, and broken piston skirts can result in worst cases. I know you hear about magazine articles that just bottle brush the bores and put new pistons in, but they are only concerned with three dyno pulls. If you're serious about this engine, do it right.
