You won't starve the mains, since you will just be returning it to original. These days the top cam / valve train manufactures do not recomend restrictors, especialy on a street motor. With the full mechanical roller valve train, the sbc delivers more oil to top then necessary, but the idea is extra cooling for the springs (as you mentioned).
