upholstery is the last item to install...

there are way to many possible ways for paint "fumes" to get into the cabin and ruin it....

Paint it first.
Sure your trim guys want to upholster it first, then they don't have to worry about scratchin new paint.
Upholstery is always the last thing to do.

It's normally standard to finish the body first. However, I've seen a few do the opposite too. The jambs and cut-ins should atleast be done first either way.

They are prob worried they will damage the fresh paint. That is the only reason I would think they would want the interior done before paint.

If I was rebuilding something like a 34 coupe I would have the paint done before any other cosmetic work. I assume you will be wanting to paint the inside as well, If the interior is completed before paint then you would need to remove all of it before you could spray inside. Seems like a waste of work and time and the risk of possibly damaging the new interior. I would tell the upholstery shop, too bad.
