Planning my strategy - advice needed

Hello, this is my first post. Hope I can get some good feedback from you guys.

First I will explain my plan or dream if you will. Then I have a couple questions.

The car: looking for a convertible around the age of 1959-1969. I'm not super picky on the brand or year. I have been leaning towards the 59-64 styles in general. Basically it needs to be large and long. I know this is rather vague but I will hopefully be able to explain my vision. for some guidance I like the looks of the impala and fairlane.

Question 1: to narrow my search I need the pros to tell me a couple things. Any cars come to mind that are numerous enough that they are easy to find not specifically expensive and no one will be super upset if it's modded.

Question 2: does it make sense to put a modern engine in these cars rather than keep the original? My main line of thinking is HP and fuel efficiency.

Last question: I know it is less expensive to buy a finished car. With that in mind, how complete of a car should I look for? I might anticipate mods such as shaving door handles, removing some trim (I'm a fan of a smooth clean look but likely wouldn't go extreme with body mods etc). Possibly lowering or adding some adjustable air bags.

So, perhaps I'm all over the map and this might be a rough post but I'm hoping some good things come of it. I have a fairly specific image in mind but I need a little guidance that really only comes with experience in the hot rod world.

Feel free to ask me some questions back if there is any clarification needed.
