Pontiac 455 short block.

Im going to pick up a pontiac 455 short block, the guy said he put new pistons and bearings in it....the way things go for me if i dont pull it apart something will break. Now if i take it apart, will i be hurting any of the bearings since they have already been torqued? Or can i tear it down and put it back with no worries?

There is no way a new bearing will be hurt by taking them out carefully. If they are new they will still be new.
If they are used, replace them, Pont are not the cheapest but still the rod bearings take most load.
With that said I have taken many engines apart that were assembled poorly.
New Pistons? only if you are going to bore it. Cylinder size and finnish is very important.
Moly rings are best if it has been freshly bored and honed for them, "smooth"
I could go on and on.
