can I remove the whole choke assembly without having problems like in this picture and leave it that way?

Yes. You will also want to remove the choke butterfly from the air horn- it is counterbalanced to have a normally open position, but I wouldn't trust that it couldn't get sucked closed in an extreme circumstance.

Grind the peened ends of the screws off to make removing the choke b-fly and shaft easier.

You don't say if it's a vacuum or electric choke. If it's electric then you can just remove the housing, but if it's vacuum then you need to plug the vacuum hole in the main body (it's where the forward-most support leg fits on the side).
It's not big, slightly less than 1/16" in diameter.

That is the one. It, the linkage that runs down to the thermostat, and the lever that attaches the link to the thermostat is all there is to remove.

There is no benefit in removing the air horn like you see done w/Holleys.

definatly remove the plate if removing the other. I take off all the choke parts as well when I race b/c of the chance of them getting sucked or stuck shut is a real possibility.
