What you are discribing is not a matter of Lean or rich.

It's a matter of unburned fuel exiting the exhaust.

What cam is in this motor? The typical stock (distributor timing /carb) setup does not work with big cams.

You can fix that. What cam? What is the idle timing?

Once you have corrected that if you want to know if the engine is running lean------------ 14.7:1 AFR--------- running rich you can install a common
lower voltage---- .450Volt ---- higher voltage

O2 sensor on the exhaust and read the voltage output with a volt-meter.

The only way to tell the fuel pump fuel pressure is to measure it at the carb with a fuel pressure gauge. Edelbrock carb: Not more than 5.5PSi
