You MUST polish after wet sanding down to 1500 or 2000. The sanding will level the surface but leave it very dull. Can't sand metallics no matter how many coats you apply 'cause you will expose the metallic flakes which ruins the job. Clear coating is the only option for custom paint colors like pearls, metallics and candies. 3 coats for a solid color is a safety factor against sanding thru the paint. If you mix the hardener to mfgr specs it should sand and polish fine.
