SBC 350 operating temps

What is the safe upper limit for a sbc ? At what temp do they generally give the best performance ?

I run a 180 degree thermostat and it seems to really like that.
any lower and youll start building sludge

The reason I ask is I run a 165 thermostat and it usually runs in the 185 range until I start Floggin it hard then it will heat up to 205 , I dont let it get any hotter than that . It will not sit in the desert heat and idle without going out of my comfort zone of 205 so I wont sit in traffic in summer .
Just wondering how far past this is safe ?

gm operating temp

oem thermostats are set to open at 195-205 degrees, but you can safely run the motor up to 245 degrees with no problems. it will run its best at about 210
