I did something similar to Techinspector - I used longer bolts and instead of washers, used nuts to take up the difference. Thread the long bolt into the block until it stops (finger tight), then used the nuts to tighten against the engine stand. My stand is a cheapie from HF. It has nuts welded to the frame to store the bolts. That way the bolts are always with the stand for the next time I need it. If yours doesn't have a place to store them, you could use the nuts to hold them in the flanges on the stand.
